- 5Qt KitchenAid Stand Mixer, 7-Cup Food Processor
For The Flatbread
- 1 1/2 cup All-purpose Flour
- 1 1/2 tsp Baking Powder
- 3/4 tsp Sea Salt
- 2 tbsp Olive Oil
- 1/2 cup Water Warm
For The Pesto
- 2 cups Basil Leaves
- 2 tbsp Pine Nuts
- 2 cloves Garlic
- 1/2 cup Parmesan Cheese
- 1/2 cup Extra Virgin Olive Oil
- In your 5 qt KitchenAid Mixer, combine the flour, baking powder, and the sea salt and mix a bit.
- Add in the wet ingredients and knead the mixture using the dough hook on speed 2 until the dough comes together.
- Cover the dough with plastic wrap and rest for 15 mins.
- Divide the dough into 2 equal portions and flour your work surface. Using a rolling pin, flatten the dough to your desired shape until 1/8 inch thick.
- Pre-heat oven to 210 C and place the flatbread dough on a lined baking sheet and bake for 8 minutes.
- Remove from oven and place the pesto, tomatoes, pine nuts, mozzarella, and bake for another 10-12 minutes until edges are golden brown.
- Top with fresh basil.
- Slice the flatbread and enjoy!
For the Pesto
- Put all ingredients for the pesto in your 7-cup KitchenAid processor and blend until smooth.
