Instructions
  1. In your 5 qt KitchenAid Mixer, combine the flour, baking powder, and the sea salt and mix a bit.
  2. Add in the wet ingredients and knead the mixture using the dough hook on speed 2 until the dough comes together.
  3. Cover the dough with plastic wrap and rest for 15 mins.
  4. Divide the dough into 2 equal portions and flour your work surface. Using a rolling pin, flatten the dough to your desired shape until 1/8 inch thick.
  5. Pre-heat oven to 210 C and place the flatbread dough on a lined baking sheet and bake for 8 minutes.
  6. Remove from oven and place the pesto, tomatoes, pine nuts, mozzarella, and bake for another 10-12 minutes until edges are golden brown.
  7. Top with fresh basil.
  8. Slice the flatbread and enjoy!

For the Pesto

  1. Put all ingredients for the pesto in your 7-cup KitchenAid processor and blend until smooth.
